We are currently recruiting our Chinese Chef de Partie
As a Chinese Chef de Partie, you work under the direction of the Jr. Sous
Chef to prepare food in accordance with Per Aquum resorts policies and
standards. You will assist in the smooth running of the kitchen operations and
maintain very high standard hygiene practices. You will follow brand standard
food specifications with a high level of performance, presentation, service
delivery and ensure minimum food wastage in the kitchen. You will prepare, cook
and serve Chinese and others Regional Dishes including appetizers, soups,
curries, sauces and dressings, salads etc.
Key responsibilities of the role include:
- Supervise the work of Demi de Partie chefs and Commis chefs.
- Participates in menu planning in consultation with the Executive Chef/Sous chef
- Preparation, presentation, decoration and menu dishes appropriate to the resort menu, location and guest mix
- Ensure that outstanding culinary technical skills are maintained
- Assist with organizing special events and special food promotions
- Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations
- Maintain a hygienic kitchen
Commis
Vacancy description
As a Commis I, you are responsible for preparing and presenting high
quality dishes to deliver an excellent Guest and Member experience. A Commis I
would also be required to assist with food cost controls.
Key responsibilities of the role include:
- Prepare and present high quality dishes within company guidelines
- Keep all working areas clean and tidy and ensure no cross contamination
- Prepare all mis-en-place for all relevant menus
- Assist in positive outcomes from guest queries in a timely and efficient manner
- Ensure food stuffs are of a good quality and stored correctly
- Contribute to controlling costs, improving gross profit margins, and other departmental and financial targets
- Assist other departments wherever necessary and maintain good working relationships
- Report maintenance, hygiene and hazard issues
- Comply with hotel security, fire regulations and all health and safety and food safety legislation
- Awareness departmental targets and strives to achieve them as part of the team
